Sustainability is a core value around which the breakfast concept is built. This is realized through different aspects. Coffee is being served at the table, and the guests shall experience friendly employees who pay attention to individual wishes and requests and have time for a chat.

The buffet contains a large variety of local specialties developed especially to, and by the hotel. Several dishes on the breakfast buffet are award-winning products and have certifications of excellence within different categories according to the Norwegian standards of food quality certification; “Matmerk”.

Some examples of products to be found on the breakfast table at Thon Hotel Lofoten are award-winning cheese from the Aaland Farm, bread baked with seaweed and locally crafted beer from “Lofotpils”, willowherb lemonade, locally roasted coffee, ice cream, salmon, whale, herbs. Also, they focus on minimizing food waste. As an example, they make marmalade from the peel being left over from the orange juice processor.
